Taco Soup (THM S)

This makes up such a nice, hearty, warm, nourishing pot of soup that the whole family will love.  <3

Ingredients

2 lbs of lean ground beef

1 28 fl oz can of diced tomatoes

1 156 ml can tomato paste

3 cups of beef stock or water (beef stock just kicks the flavor up a level)

1/2 cup of half and half cream

1 8 ounce package of cream cheese (softened)

1 medium onion diced

4 cloves of garlic

3 tbsp tamari sauce (you can use Bragg’s Liquid Aminos or Soy sauce)

1 tsp cumin

1 tbsp garlic powder

2 tsp onion powder

1 tsp chili powder

1/4 tsp chipotle chili powder

1 tbsp dried oregano leaves

1 tsp salt

1 tsp pepper

Directions

  1. In a large pot fry up your ground beef, once cooked through drain excess fat.
  2. Once drained add diced onions and minced garlic, fry until onions are cooked through.
  3. Add garlic powder, onion powder, cumin, both chili powders, salt and pepper.  Let it cook just to help release the flavors for about 3 minutes.
  4. Add softened cream cheese, and blend in with cook beef and spices so the beef is very well coated with the cream cheese.
  5. Once beef and cream cheese are mixed well add cans of tomatoes, beef stock (or water), half and half (aka blend or 10% cream), tamari (or Bragg’s liquid aminos, or soy sauce), and dried oregano leaves.
  6. Let simmer on low stirring frequently, for an addition 30 minutes (if in a rush) 1 hour if you have the time to wait for it.  YUM

  1. I would love to try this but I’m unfamiliar with tamari sauce (?) – can you share what that’s similar to or what flavor it adds? That’s the only ingredient I’m missing. Thanks for all of your great recipes!

    1. Hi Vicki, I’m sorry I don’t count calories with Trim Healthy Mama. Eat until your satisfied, not stuffed.

  4. Hi,My local grocery store didn’t carry Chipotle chili powder so I bought crushed chipotle pepper. How much would you recommend using in the recipe?
