Chrissy’s Chili (THM S)

Some nights just call for a bowl of chili.  This just happens to be an easy, “throw-together” meal that is a winner every time.  <3

Ingredients:

1 med. diced Onion
1½ tsp Pink Himalayan Salt
2 pounds of extra lean ground beef (or pork,  or turkey)
1 13fl oz can of Tomato Paste
1 Orange Pepper diced
2 cups of Mushrooms (quartered)
1 540 ml can Red Kidney Beans (drained and rinsed)
2 Tbsp chili powder
1 1/2  tsp cumin
1 tsp onion powder
2 tsp garlic powder
2 tsp cocoa powder
1 tbsp Oregano
5 cups of water
⅛ tsp Chipotle Chili Powder
4 dashes of Tabasco sauce
2 tsp Lime juice

Instructions:

Brown ground beef with diced onion and salt.  (if your meat isn’t extra lean, you will want to rinse with hot water and drain your meat before adding your spices.)

When beef is cooked add diced orange peppers,  chili powder, chipotle chili powder, garlic powder, onion powder, cumin, cocoa and oregano.  Let that cook with the beef for 5 minutes to unlock deeper flavors in the spices.

Add all remaining ingredients…..mushrooms, tomato paste, rinsed kidney beans water, Tabasco sauce, lime juice,  then  your rinsed kidney beans.   Mix well and simmer on low for 1 hour stirring frequently.

*Worried about crossing over? Though with the measurements of a cup and a half serving size this shouldn’t happen,  but what if you’re really hungry?  Read on…

**To keep this recipe within “S meal”  guidelines you want to keep the amount of beans you eat to less then a ¼ cup. How I avoid having a crossover is I simply ladle out my portion(doubled) to a smaller pot after all the ingredients, except beans, have been added. I then scoop a ¼ cup of the kidney beans into that doubled portion to keep the bean amount down and me,  without any doubts,  in S territory!

      1. Most of the toxins are found in the fat of beef, so when you rinse you are rinsing toxins!!! <3
