Pumpkin MIM (THM S)

I have all this lovely canned Pure Pumpkin sitting in my pantry waiting for me to use it.  I had a few ideas with what I wanted to create and a quick MIM was one of them. My hubby and I were without kids today (thank you Nanny B) just spending time together and for some reason time just flies by.  Within a blink it was lunch time, and I hadn’t prepped ahead of time, so this was the perfect occasion to break out that canned Pure Pumpkin and let my creative juices flow.  I bet you’ll all agree when you make something for someone you love, and they love it…you feel great.  It’s one of the best feelings in the world….I love to feed my man, and I love that he loves what I make him.  So here you go…hope you like it too <3

Ingredients:

1 Tbsp Butter (softened)

1 large Egg

3 Tbsp Pure Pumpkin

1/4 cup Baking Blend (I use Nili’s Baking Blend)

1/2 tsp Baking Powder

1/2 tsp Pumpkin Pie Spice

1 tsp Vanilla Extract

1/8 tsp Salt

1 1/2 tsp Super Sweet Blend (add more if you like it super sweet)

Instructions:

Combine all ingredients in a microwavable bowl, blend well and microwave for 1 minute 30 – 1 minute 50 (depending on strength of you microwave)

Serve with topping of choice.  I love plain Greek yogurt sweetened with Stevia.

  1. Yummy!! Do you know what I would need to adjust to make a bunch at a time and bake them?

    1. I’d just quadruple the in ingredients but use one less egg. Then you can make them in a cupcake pan, baking at 350 for 15- 20 mins

  2. Delicious! I subbed 1/2 tsp maple for the vanilla and topped with maple Greek yogurt (trivia, maple). Thanks for sharing!
