Chocolate Chip Muffin in a Mug

I’ve love the thought the chocolate chip cookie dough and I will make my Raw Cookie Dough recipe often (See Recipe Here), but when I am missing that warm, right out of the oven, melty chocolate yumminess that goes so beautifully with a big glass of milk….almond milk that is, I make this little ditty. 😉

Ingredients:

1 Tbsp Melted Butter

2 tsp Gentle Sweet (buy here) – OR – 1 tsp Super Sweet Blend (buy here) – OR –  or sweetener of choice

2 tsp Gwen’s Nest Brown Sugar (it adds a nice brown sugar flavor, if you don’t have it no sweat, just double the sweetener you’ve chosen listed above)

1/2 tsp Vanilla extract

1 pinch of Himalayan Salt (buy here)

1 Egg

1/3 cup Baking Blend (buy here)  or use  1/3 cup Nili’s Baking Mix (see recipe here)

2 Tbsp of Water

1/2 tsp of baking powder (aluminum free) (buy here)

2 Tbsp of sugar free chocolate chips (buy here)

Recipe:

Melt butter in bowl first, then add all other ingredients(except choc. chips).  Sweeteners, vanilla extract, salt, egg, baking blend, water, baking powder.  Mix well then add chocolate chips.  Place in microwave for 1 min 35 seconds, or bake for 15-25mins (time depends on the blend you use, take out when top is no longer jiggly) on 350 in a  muffin tin (I like it best baked) or ramekin.

Let cool as long as you can wait, then dive in!!!  You can always pour a little heavy cream over this for a cookies and cream flavor.  So yum!! Enjoy!!
