Tex Mex Breakfast Scramble (THM Deep S)

I’ve fallen in love with this breakfast and can’t get enough of it.  I’ve even made it for supper.  I can’t get over just how easy is it to make (literally less then 5 minutes from start to finish) and how satisfying is it.

I have no problem with this meal holding me a full three+ hours until my next meal.  This can be a struggle for me so I’m always happy to find a meal that makes this a non issue.

 

Tex Mex Breakfast Scramble

Recipe:

1 tbsp Coconut Oil (or butter if you prefer to fry in that)

1 medium Zucchini (washed and diced with skin on)

3 pieces Deli Ham (diced) or any meat of choice.

1/4 tsp Cumin

1/2 tsp Chili Powder (not the hot kind)

1/4 tsp Onion Powder

1/4 tsp Garlic Powder

Seasoning of Salt & Pepper (to taste preference)

2 Large Eggs

Instructions:

  1. Dice up your zucchini (leave skin on).
  2. Melt coconut oil (or butter) in frying pan. Use medium heat.
  3. Put diced zucchini in frying pan with all the seasonings (cumin, chili powder, onion powder, garlic powder, salt and pepper) and fry until zucchini and spices are well blended.
  4. Immediately add diced ham to the zucchini and fry until zucchini is starting to become soft (cook longer if you prefer your zucchini quite soft).
  5. Remove zucchini scramble from pan and place on a plate.  Remove pan from heat just for a minute while you get the scramble eggs ready.  Do not clean pan yet as you’ll be using it to scramble your eggs.
  6. Break two eggs into a bowl and scramble (add nothing to the scrambled eggs) and pour into the frying pan that the zucchini scramble was in (set to medium heat).  Cook and Scramble in pan until done and transfer on top of your cooked diced zucchini.
  7. garish with your favorite hot sauce (or leave bare if you prefer).
  8. Eat it up!! YUM

  1. I have been loving this recipe! This morning I wanted to make it but was out of ham, but I did have turkey pepperoni. So I made a pizza version! Instead of the cumin and chili powder I added dried basil. Then instead of ham used turkey pepperoni. I spread a little pizza sauce on top of my eggs. Delicious!

  2. What makes this a Deep “S” vs an “S”? Could you add a bit of cheese to this as well?

    1. The absence of dairy, and nuts. Adding Cheese is a great idea however it will make it a Heavy S. Check out the THM plan book for a better explanation of the different types of S meals. 🙂

  3. This is amazing! I did not have chili powder but subbed paprika and it’s delicious!! I don’t eat lunchmeat, but my husband does, so I used his ham lunch meat. Wow!

  4. Thank you for this recipe! I wanted Taco Bell so badly, saw this recipe, & I made this instead! Since I didn’t have ham, I used sausage, & it was great! Hit the spot! This will be a repeat dish!

  6. Quick question: I am cooking for a family of 7. What is an appropriate amount when using coconut oil? I’ve tried unsuccessfully to use coconut oil proportions and the recipe turned out soggy and very oily.

    1. You just want enough to keep the pan nonstick. That is it’s only function, so start with a Tbsp or a bit less.
