This baking blend as created by Nili Barrett. I happen to think it compares to the THM baking blend quite wonderfully, so, with her permission, I thought I’d post it on my blog since she doesn’t have one.

I personally have had great result switching out the collagen powder for whey protein powder in equal parts.

1 cup of Golden Flax meal (100 g) Buy Here
1 cup of Coconut flour (100 g) Buy Here
1/3 cup + 1 Tbsp Almond Flour (40 g)Buy Here
2 cup Oat Fiber (180 g) Buy Here
1/2 cup + 3 Tbsp Hydrolyzed Collagen (70 g) Buy Here
2 Tbsp Glucomannan (20 g) Buy Here
Mix together all ingredients and store in an air right container. Measures scoop for scoop with the THM Baking Blend.

Is there a substitute for the collagen.. Or can I leave it out?
Yes you can leave it out without it changing the consistency…. It does reduce the nutritional info though.

Does this blend need to be stored in the refrigerator? Also, I would use the exact amount THM recommends for their recipes?
I store mine in my cupboard in an air right container… And measure 1:1 with thm’s baking blend

You can use seed flours such as chia, sunflower or pipita in place of nuts but the last two can create a greenish product due to chlorophyll.

In the question above you said you can NOT use xanthum in place of Gucci-is this a mistake?
nope, not a mistake……I’ve tried this only once and it turned out terribly. I had always worked from the understanding you could do this until I put it to practise and found I’d made a triple batch that was almost unsalvageable. So I strongly suggest purchasing the Glucci specifically for this recipe.
Can you sub something for oat fiber..don’t have

I am gluten intolerant … What can I do about the oat fibre?
I’ve heard people have had success with using Psyllium husk. I’m not sure of the conversation amount though.

Oat fiber doesn’t seem to affect people.
It’s been a long time since this comment! But I figured this might help someone – I have read of folks substituting ground psyllium husk for oat fiber in other low-carb baking recipes, and while I have not tried it, I can see how they might behave similarly in a baking blend. Psyllium husk is usually pretty easy to find locally (look for it with laxatives!), unlike oat fiber. I can buy it ground in the bulk bins at my local Sprouts.
What could you replace the collagen with? It’s the only thing I don’t have 🙁
I just replaced whey protein powder with the collagen, one for one with great success.
I have replaced it with protein powder before to with great results.

Can I use Vanilla protein powder or should it unflavored?
if you plan to make savory creations with the blend, vanilla isn’t the taste you’ll want. If you only plan to make sweets it would be ok.

Not really that I know of Ashley. However to could search for a different mix that doesn’t use it. You’d likely have good luck that way. 🙂
You should be able to sub flax for this. It will just be a darker color; nutritionally it is the same.
Is this flour mix an S or FP?
It’s an FP as Nili has written it.

Hey..love the video. I think one reason the fiber count of the THM blend is higher could be related to how fine they ground the flax seed. I know you mentioned the larger particles in their blend. Going to try your recipe. Really need to get more bang for my buck with special ingredients. Thank so much!

I’ve tried subbing xanthan gum for glucci and it was an awful result. I would stick with the glucci.
Can real cut oats be used to make oat flour?
Ooops this recipe calls for oat Fiber…not to be confused with Oat Flour….Trust me I know it’s a lot to figure out, and there’s sooo many varieties of flours that it can be overwhelming to sort out.
And this is great for those of us who don’t live in the USA and don’t want to pay the shipping cost and exchange rate

What is the purpose of glucomannan in this recipe?
works as a binder I think….I’m not totally sure as it’s a recipe from my sweet friend Nili….but that answer seems to make sense to me.
I don’t want to buy new products and would prefer to use what I have on hand if they would work.
Can I use xanthan gum in place of the glucomannan ,and if so would I still use 2 TBSP?
I couldn’t find oat fiber at my store, but I did buy Bob’s Red Mill Oat Bran, is that the same thing?

Oat fiber, and oat bran are super different so I don’t recommend switching those out…. As far as using xanthan gum instead of glucci, I’ve tried it with very poor result. Sorry mama.
