This recipe has been a favorite of mine since my lovely mother in law made me her, non THM version years ago. I would always ask her to make it when we had a family gathering. Since adopting THM the sweet brown sugar that’s in her recipe was out for me, as well as her added carrot that I could do without.
So it was time to tie on the apron and figure it out THM style with the addition of caraway seed, and apple cider vinegar and I am so happy I did! It turned out better just as good (tee hee) as I remember. 🙂
This is such a great meal for any occasion that calls for the savory blends to wake up the pallet. I hope you enjoy this as much as I do! <3
Bacon Hot Slaw Ingredients – S THM
5 slices of Bacon (chopped into bite size pieces)
1 lb of ground pork
1/2 medium onion sliced thinly -OR- 1 tsp Onion Powder ( to make this dish a Deep S)
1 pound of a mix of green and red cabbage sliced thinly
3 Tbsp of Apple Cider Vinegar
1 tsp of Caraway Seeds
1 tsp black pepper
1 tsp Sea Salt
2-3 Doonks of Stevia (or sweetener of your choice)

Cooking Instructions-
*Cut up Bacon into bite size slices and fry in large frying pan until translucent.
*Add Ground Pork to the Bacon and cook both until done. Drain the meat and set aside. Save drippings in fry pan.
*Add thinly sliced Onions to the fry pan with the saved drippings, and cook until softened ( I added 1/4 cup water to simmer at this point, simmer until water is gone).
*Add your thinly sliced Cabbage to the Onions in the frying pan and mix well.
*Add the Apple Cider Vinegar, Caraway Seeds & Sweeteners and allow the mixture to cook for about 5-7 minutes until cabbage noticeably softens.
*Season Cabbage with Salt and Pepper
*Add the set aside cooked Bacon and Ground Pork and mix well.
*allow to cook for an additional 10-15 minutes until you notice some edges of cabbage browning.
Eat on its own as a filling and satisfying S meal.
Serve over rice for those not on THM(kid tested and approved)

I can eat bacon and ham but all other pork products disagree with my stomach (don’t ask me, I can’t explain! I know its weird). Would this still be a deep S if I used ground turkey? I’m thinking that would probably take on the flavor of the bacon better than beef??
yes ground turkey would work wonderfully.
