Roasted Cauli-flavor (THM – S)

These are one of our family favorites.  I know they don’t look like much, but don’t be fooled they are incredibly delicious.  I love how they bake up so flavorful and out of this world….I honestly would eat just a whole plate of these alone.  You’ll want to eat these little gems like candy they are so darn tasty!!!  🙂

Ingredients

1 medium head of cauliflower
5 large garlic cloves minced
1/3 cup Parmesan cheese (I prefer reduced fat)
2 tbsp coconut oil (melted)
2 tsp parsley
1 tsp salt

Separate cauliflower into bite sized pieces.

1/3 cup Parmesan cheese.

5 garlic cloves diced and set aside

2 Tbsp of coconut oil melted.  (I used LouAnna to minimize the coconut flavor, any brand would be fine)

Place all ingredients into a large zip lock bag and shake shake, mix mix. 😉

place on a large prepared surface( tinfoil and light brushing of melted coconut oil, about an addition 1 tsp’s worth), don’t over crowd the pan or it won’t caramelize.

Take out at the 10 minute mark to stir well.  Return to oven for remaining 10 minutes.

Voila, the finished beautifully caramelized product.  Delicious <3

Bake 450 degrees for 20 mins

Ingredients:
1 medium head of cauliflower
5 large garlic cloves minced
1/3 cup Parmesan cheese (I prefer reduced fat)
2 tbsp coconut oil (melted)
2 tsp parsley
1 tsp salt

Break up cauliflower into bite sized pieces.  Place in large seal-able plastic bag.  Add all remaining ingredients to bag.  Seal bag, mix all ingredients well, making sure cauliflower is well coated.

Place on a large tinfoil lined, oil coated pan(an extra tsp of melted coconut), spread out the well coated cauliflower.  Leave lots of space for maximum caramelization, if your pan is over crowded it wont, so make sure your plan is big enough.  Place in preheated oven (450 degrees) and bake.  Stir well at the 10 minute mark, replacing for the remaining 10 min until it’s cooked the 20 minutes total.
