Chrissy’s Breakfast Sandwich

This is one my favorite breakfasts to make and take, or sit and enjoy.  I love how simple it is.  You take your eggs, then you take you Smart bun….lol.  Ok so it’s a little more complicated than that, but not much more.

I’m vary excited to add the Smart Buns from The Smart Baking Company to my household, they are making my life easier.  The possibilities with these buns are endless, you can put anything between these guys and you’re never missing out.  You see I’ve felt like I’ve been missing out not having buns to use that would be ok for low carb eating.  It’s the thing I’ve miss the most in changing my way of eating, so being introduced to Smart Buns has been a total game changer.

Being able to make these breakfast sandwiches in the morning saves me time, helps me stay on plan, and keeps me satisfied until it’s time for my next meal.  I feel like I’m cheating when I eat them actually…lol  That’s how great these little buddies are!

The buns on their own fall into the FP (Fuel Pull, less than 10 grams of carbs & less than 5 grams of fat- within the Trim Healthy Mama eating plan) territory so you can enjoy these with a lean meat, egg whites and some fruit on the side as an E option (E means Energizing or higher carb- up to 45 grams of carbs- and lower fat -no more than 5 grams of fat- within the Trim Healthy Mama eating plan).

Simple Breakfast Sandwich (THM S, E or FP)

serving size: 1 (Simply multiply recipe to feed more people)

Ingredients:

1 Smart bun

1 Egg (whole egg for an S, or just the whites for an FP/E option)

2 pieces of deli meat of choice (ham, turkey, bacon etc)

2 slices of tomato

Cheese sliced (sharp cheddar or whatever you like)

2-3 Tbsp of Mayo

Salt and Pepper to taste

Instructions:

Fry egg in a frying pan in butter, coconut oil or palm oil(use coconut oil spray for an FP sandwich).  Break yolk and fry until evenly cooked (unless you like it runny of course)

Spread Mayo on Smart Bun(toast if you’d like), top with egg, 2 thin slices of tomato, cheese and season to taste with salt and pepper.

Serve and enjoy, so quick so easy!!

  1. Chrissy, I. Annoy find your post from yesterday with you BP Coffee, but I made it for breakfast today and LOVE IT! Your recipes are always great!!! Thank you for this new version of an old fave!

    1. I order them from a couple different places….if you’re in the States you can order from their website I’ve linked in the post, if in Canada there is an online low carb Canada store you can order them through.
