Pesto Chicken Salad (THM S)

So this weekend is a birthday extravaganza for my daughter, she is a homeschooled kid that has more friends than I know what to do with.  The variety of personalities is as wide as the amount she has, so one generic birthday party would mean a select group or two would be unhappy with what was happening. Now,  I’m not usually one to placate to kids and their “preferences” just for the sake of their happiness….normally. tee hee

I thought it would be so much easier (yup totally selfish motives) to have an evening video game night for her friends of that preference, and a more girlie afternoon party on Saturday for her friends of that preference. And it’s gone off without a hitch.  Each party was a nice short, 3 hours only, get together with snack food.  Nothing planned beyond gaming for party 1 and hanging out watching cute movies for party 2….I just stepped back and let them go!  Brilliant if you ask me.  I’ll be doing this more often.

I’m so blown away with my daughters ability to adapt and fit in with so many different personalities and groups of friends.  I love that quality in her.  She wants to friend even the friends that others don’t, she has a real heart of compassion and love, hates to see people excluded and loves to be surrounded by her peers.  Plus she is the life of the party!!! Ok Gushy mama moment over, moving on to the food portion of this post now…lol

You may have noticed I said she had snack food…..well that’s fine, she’s young, but there was no way I’d get away with eating any of those foods….they are not conducive to my goals of health and weight loss.  I’m so happy that I don’t struggle with those cravings anymore since using Plexus(learn more here) everyday and eating the THM(learn more here) way.  Love my pink drink and sugar-free eating plan!

I love eating the Trim Healthy Mama way, it really satisfies and nourishes me it’s helped me lose 60 pounds.  I would have been lost this weekend without THM and Plexus.  Willpower only goes so far, but when you kill off your candida overgrowth and stop feeding the candida in your gut(learn more about candida here) with good healthy food you can make an ice cream cake, serve chips and pour sodas without so much as a bat of the eyelash!  You just don’t crave it anymore, it’s got no power over you. It’s incredible how well THM and Plexus work together to help achieve our goals.

I love that I now get excited about a huge bed of greens topped with amazing vegetables and chicken drizzled with a pesto sauce. I mean come on….does it get any better than that?  Nope! lol

Serves 2 Full Salads, or 4 side Salads


Pesto Chicken Salad (THM S)

Pesto sauce (look for a no sugar added brand)

For the Chicken

2 Chicken Breasts

1/4 tsp Garlic Powder

1/4 tsp Onion Powder

1 tsp Oregano

2 TBSP Parmesan Cheese (shredded)

Salt and Pepper to taste

For The Salad

1 Head Romaine Lettuce

1 Bell Pepper (Red, Orange, or Yellow)

1 Whole Avocado (de-seeded and diced)

1/4 Cup Red Onion (white is ok as well, red just tastes better)

1/4 Cup Parmesan Cheese - (shredded)

Green Onion (enough to lightly garnish)

For The Dressing

1/4 cup Olive Oil

3 tsps Apple Cider Vinegar


    For the Chicken
  1. Preheat oven to 375 degrees.
  2. Mix all the seasonings, spices and parmesan cheese together in a small bowl, and divide the mixture to use on thawed chicken breast. Sprinkle or rub the mixture on the breasts to coat as best as possible. Bake for 25 mins (check for an internal temperature of 175 for doneness)
  3. For Salad
  4. Tear lettuce so it's bite sized, and place into a large salad bowl.
  5. Cut up veggies in small pieces, again looking for bite sized pieces here.
  6. Top Lettuce with cut up veggies
  7. Drizzle and toss olive oil/vinegar dressing to dress the salad well.
  8. Serve on a plate and top with cooked diced chicken breast pieces.
  9. Spoon dollops of pesto on top of dished salad (you choose how much or how little)
  10. Serve and Enjoy
