30 Minute Creamy Beef Stroganoff (THM S)

My husband had grown up disliking Beef Stroganoff.  Now we’ve been married for 15 years and I’ve never made it for the family before but I’ve made it for myself from time to time as I LOVE it. Since I’m a Trim Healthy Mama follower I  was so excited for their new Cook Book. (you can buy here) I was extra excited when my friend Natasha(subsequently the same friend who showed me the THM way…… thank you, thank you I love love love you!! 🙂 ) told me the Stroganoff recipe was amazing.  So I gathered up the ingredients and was prepared to start it for dinner time only to find out it was a slow cooker recipe….lol oops!!  I had a hungry household, myself included, and it was already 5 o’clock,  so I had to come up with a THM version of Beef Stroganoff (wasn’t too hard as most of the ingredients fit perfectly into the S category.)  So away I went and this is what is turned out as……probably one of the best I’ve had to date.  My husband said it was Lays Chips flavor worthy (this is apparently a HUGE compliment)…he’s now officially a Beef Stroganoff Lover!!!!  What a lovely surprise and pleasure that a total blunder turned out to be so delicious.

Ingredients:

1 Tbsp of Coconut Oil

1 Tbsp of Butter

1 Medium Onion

1/2 pound of Mushrooms

1 lbs of Steak cut into strips (we used Angus Rib Eye, you want a good cut that with remain tender)

2 Tbsp of Apple Cider Vinegar

1 tsp Salt

Pepper

1/2 cup Beef Stock

1 tsp of Dijon Mustard

2 tsp of Dried Parsley

1 Cup of Sour Cream (14%)

Instructions:

*Heat a frying pan with both butter and coconut oil, add the onions and mushrooms, fry u

Until browned and the onions have caramelized.   Then remove from pan and set aside. (YUM)

*In the heated, now empty, frying pan add your strip cut steak, and fry until

mostly browned (4-5 mins).  At which point add your 2 Tbsp’s of Apple Cider Vinegar, let simmer for a minute.

*Add all remaining ingredients in order of list….Salt, Pepper, Beef Broth, Dijon Mustard, Dried Parsley and finally sour cream.  Stir well until blended and serve.

We chose to serve this with ribboned zucchini….you could you spiralized zucchini, or a low carb noodle.

  1. We had your recipe tonight and it was really nice. I had mine over Cauli/Broccoli Rice and my men had it over brown rice. Thanks!
