This satisfying,  filling salad is so easy to throw together.   You can serve this cold with a lean meat or fish or eat it in its own as a light lunch or snack.   This has lots of protein on its own between the Quinoa and the black beans for a great meal.



2 cups of cold cooked Quinoa
Black Beans (whole 540ml can)
1 large Tomato diced
1 Yellow Pepper diced
1 medium English Cucumber diced
1 tsp Garlic Powder
2 tsp Lime juice
1 tsp Mineral Salt


Dice tomato,  yellow pepper and Cucumber into small pieces.  Place in a bowl with precooked and chilled Quinoa.   Add salt,  garlic powder and lime juice.   Mix well and serve & enjoy
